The environmental bill for a hotel buffet

Three budget lines: cans to landfill, kilowatt-hours, gallons of water

Hot side on gel fuel: thousands of steel cans a year with residual fuel, plus carbon dioxide and carbon monoxide from burning alcohol in a dining room. Hot side on induction: mains electricity for every warmer for every hour of service. Cold side on ice: 4.5 to 12 kWh and tens to hundreds of gallons of potable water per hundred pounds, every day, all of it poured down a drain by close.

What does not appear

A cordless cell is charged from the wall and used for years. A cold cell is frozen in a freezer already running and reused. A water-activated pack is one sealed pouch per service, no metal, no fuel.

Write it down

Count the cans, meter the warmers, read the ice machine's plate. The bill is larger than most sustainability reports admit, because it is spread across three budget lines nobody adds up.
