Employee burns are the injuries nobody reports
A server singes a wrist swapping a can and says nothing. It is the most common injury on a buffet and the least recorded.
Safety guidance identifies mid-service fuel changes as the most severe chafing-dish accident type. Beneath the severe cases sits a long tail of minor burns that never reach a report: a hand on a hot can, a flash from a refueled flame, steam from a lifted water pan.
Why they are not logged
Because the culture treats them as part of the job, and because logging one means admitting the procedure that caused it.
Why they matter anyway
Unlogged injuries are the pattern an investigator finds after the serious one. Employees may claim beyond workers' compensation where negligence is shown, and a history of unaddressed minor burns is negligence.
The equipment change
Cells are cool to the touch on the outside and swapped without a flame. Water-activated packs are placed cold and produce steam under a pan, not in a face.
