What it is

GN‑standard frames for the kitchen workflow

Universal is the working range: frames cut to Gastronorm sizes, so the pan that came out of the oven or the blast chiller goes straight into the line. The GN 1/1 frame carries two element wells; the GN 1/2 frame carries one. Both take stainless GN pans, and both take the disposable foil pans of the Instant Hot line.

Lids are clear polycarbonate roll‑tops: guests see the food, the lid stays on between covers, and nobody lifts a hot metal cover. Frames are black or white.

With an H1X in one well and a C1 Pro in the other, a single GN 1/1 frame serves hot and cold side by side. The Universal Primary set pairs the GN 1/2 frame with a stainless pan.

How it works

Four steps · no flame · no cord
01

Load in the kitchen

Fill a standard GN pan at the pass or pull it from the blast chiller.

02

Element in the well

H1X for hot, C1 Pro for cold, or both on a GN 1/1 frame.

03

Pan in, lid on

Pan sits on the element; the roll‑top closes over it.

04

Swap pans, not sets

When a pan runs low, lift it out and drop the next one in. The frame and the element stay on the line.

Performance in service

A lidded GN pan on an H1X holds at 80°C for three hours or 110°C for two; on a C1 Pro it stays chilled for eight. The roll‑top is the difference between the figure on the box and the figure on the line: closed between covers, it keeps the heat and the cold where the food is.

A GN 1/1 frame with an element in each well holds one full‑size pan or two half‑size pans, hot and hot, cold and cold, or one of each.

Lifespan, care and warranty

Frames and lids have no electronics. Polycarbonate lids scratch over years and are replaced as a part; stainless pans are the same pans the kitchen already owns and replaces. Warranty is one year on factory functions.

What it costs to own

Universal reuses the pans the kitchen already has. Nothing is re‑plated, nothing is transferred, and the same pan that was chilled or cooked is the pan on the line.

It replaces the chafer and its fuel, the ice tray and its drain, the heat lamp and its circuit. A GN 1/1 frame with two elements costs a fraction of an induction line to run and needs no electrician to install.

Best applications

Where it earns its place

Hotel breakfast and lunch lines

Full‑size pans from the kitchen straight to the line, hot and cold in the same frame family.

Banqueting

Rows of GN 1/1 frames with roll‑tops; no flame in a room with 400 guests.

Off‑site catering

Load the pans, drop the frames and elements in the B62, set up on arrival.

Staff canteens and campus dining

Fast pan swaps at the peak; no fuel store and no burn risk for junior staff.

Hot and cold on one frame

Curry in one well, raita in the other. Roast in one, slaw in the other.

Disposable service

Foil GN 1/2 pans for events where the pan does not come back.

Not the right tool for
  • Presentation displays in porcelain; that is Classic.
  • Cooking; elements hold food that went in at temperature.
  • Pan sizes above GN 1/1 ([TBD]).
